Tofu, Trucks and Triumph

 Greetings to our sister saints around the world! Praise the Lord that we get to send such encouragement to everyone with the press of a button.  Obviously satan will use this technology for His ill will but for the time being we shall shine our light in it!  Today as we were traveling we were greeted with passersby's (flying like 80 mph) honking angrily and giving obscene gestures but our light was shining.  (As a side note, they like to drive fast around here!)  I grew up when it was a big deal to make it as fast as 55 mph in our old vehicles and since then the vehicles go like crazy and the roads are opened for it.  In fact, one area through Oklahoma says you cannot go under 60 mph.  So you would get a ticket for wanting to go slower and be safe?  I don't know about this world, and we constantly see signs stating the death count on the highways for that state, like 686 and its not the end of the year yet.   Anyway, today was a travel day and then brother Jim changed the oil

Quick Soup and Dumplings

 Greetings sisters! Praise God for whatever provisions we have and for us, the more simple the better:-) I've shared how I like to make my own soup on the road such as THIS POST  about thermos soup.  Well, there are times we are busy and with a day that we're not sure what's going on, I don't always make soup ahead and like to have an assortment of canned soups on hand.  I'm glad I do because late tonight, after witnessing (you can see that HERE ) I was able to whip up soup and dumplings in about 10 minutes. When I find discounted soup, I stock up. I try to get the most natural I can but I don't stress over it. When I'm in an actual house (even if it is tiny:-) I make my breads, biscuits and dumplings from scratch but on the road I use a mix. Yep, there's a few ingredients I wouldn't put in mine but my Father is bigger than anything on this earth and I won't eat anything that I wouldn't serve my Savior. Quick Rice Meals and God's Merciful Provisions

 Good day sisters! I wanted to do a post for those who are looking for a quick food to have on hand for those days that are extra busy, you're ill or just tired and one our favorites is rice and vegetables.  While we travel, I use the precooked packets that I get at the discount stores. (I have my thermal cooker along to make longer cooking rice when I run out.) Even at a normal price, $1.50 in our area, they are good to have a few on hand for those 'days'. (I used to can my own rice but since I can't now, I use what's available. )  All I do is put veggies in the pot with a bit of water, dump the rice on top and bring to a boil, then shut it off for 10 minutes.  If I used frozen veggies I might boil a couple minutes.  Drain and add your seasonings. (We don't eat much meat so you can add some if you want). It makes more than one meal for Brother Jim and I, so I use the left overs for soup. (I keep a few cans of soup on hand for those days too:+)  We all know how

Love, Lights, Shocks and Blocks

 Greetings to all you sisters in Christ, scattered around the world! Let our lights so shine before men that they may see your good works and glorify our Father which is in heaven! (Matthew 5:16)   There's always so much going on that sometimes I just don't know what to pick to post here for you sisters.  An update, a witnessing experience, a keeper at home subject etc...all of which, hopefully, is an encouragement in one way or another. Today I thought I'd do a post on love, lights, shocks and blocks.  Maybe with some other things added into it, we'll see as I go:-) Love.  God's Word teaches us that love (agape) is not just a feeling, it's an action.  When it comes to husband and wife there is to be agape love as well as a more close love between to people but for the sake of not teaching theology here, I just wanted to give some examples of that sort of love in a simple manner in our life. Simple Pumpkin Cake Bread

Greetings sisters in Christ, This is just a quick post on how to whip up a nutritious snack, Pumpkin Cake Bread.  I don't know whether to call it cake or bread by the texture of it but either way it's tasty:-) This is great to have the ingredients on hand because you can mix it up in a matter of a couple minutes and have it baked in less than 20. You need: * 1 Spice cake mix (or make your own if you like) * 1 can of pumpkin 15 oz * (optional topping) That's it! Mix them both together, spread onto a greased baking sheet and bake at 350 for 18? minutes?  You know your oven better than I do so I'm sure you can figure out the timing.  I spread mine on a thin baking sheet so that it cooks faster but you can make yours any way.  We like to add a natural topping to sweeten it up a bit, like coconut.  You could sprinkle chocolate chips, cinnamon sugar mix or use frosting.  You could also leave it plain and top it with yogurt, we like that too.  Use your cooki

Solar Soup Stock and Pan Cookies

Hello sisters in Christ! I pray your day is joyous in the Lord and you are striving on in obedience in love of the Father. Today I want to share with you about making soup stock in the solar cooker (sun oven, solar oven, whatever you call it:-)  You can see mine  HERE  and what we do with it. It gets up to almost 250 degrees on a sunny day as long as I rotate it accordingly so I can do quite a bit with that sort of temperature. One day I decided to make chicken soup stock in it and it turned out great!  I just put the bones in a black cast iron dutch oven, covered them with water and let the sun cook it all day.  The result was an awesomely rich broth.  Once it was done I picked out the bones and added a handful of dehydrated veggies and a package of noodles and let it sit for an hour.   Turns out most of the stock got soaked up by the dry foods :-) but it made a great meal.
