Banana Pancakes

Greetings sisters in Christ! How are my keeper at home sisters doing today? I'm just going to do a quick post on a simple recipe that made brother Jim really happy! We rarely eat regular pancakes and one day, not long ago, he asked if I would make some for him because we still have some real maple syrup left so I made these instead of the traditional kind.   I'm sure many of you already know about them but I'll share just in case a sister has never tried them.  They are super easy and a great way to use up older bananas. * 1 Banana * 1 Egg * 2-3 Tablespoons flour  * Cinnamon (optional)  *Mash the banana then mix in the egg, flour and cinnamon. (I hand mash and mix, the batter will be sort of lumpy but that's fine.) *Pour small amounts into a hot skillet and cook one side until you see it drying around the edges.   *Flip and cook a few minutes til it's done. Some people don't use flour but I like the consistency better and they are easier to flip

The Blessing of a Window and Homemade Hummus

Greetings sisters in Christ! Spring is in full swing here at our little off grid homestead and we're still working hard getting projects done.  One such project is that we had a window in our bedroom that was covered by metal on the outside.  At the time we were setting this place up and brother Jim was putting the roof and porch on, we decided to just tin over the one window on the end of our bedroom.  (You can read how we set up our homestead HERE .) Just the other day brother Jim said we should look into opening it for better air flow so that's what he did today!  He had to cut the metal away from the window and frame it. What a blessing that is because it lets in more light and lots more air.  Tomorrow brother Jim is going into our utility cabin, the little one by the house, and putting in some shelves for me so that I have like a pantry area again for my food storage.  I'm excited because I have piles of stuff in there just waiting to be organized:-) As

No Knead White Boule Bread

I pray you are all diligent in your keeper at home duties :-) Today I bring you an easy bread recipe that I found on my old homestead blog.  I hope you enjoy it. **************************************************** This bread is super simple to make and tastes excellent.  It slices great, you can rip hunks off it, it doesn't fall apart and everyone we serve it to is astonished at how simple and tasty it is, not to mention economical! You will need 4 ingredients: 3 cups White Flour 1 teaspoon Salt 1 teaspoon Yeast 1 1/2 cup Water (warm) That's it!  We try to purchase unbromated/unbleached flour when possible but don't fret if you can't find it, you're still doing yourself a favor by making your own either way as compared to buying from the store. Homemade Pizza

Today we woke up to rain but not long after the sun came out.  There's something uplifting about the sunshine (most of the time:-) after coming out of a darker winter like some areas have.  Brother Jim has been working on cleaning up some wood piles around here and we'll likely get more wood cut and stocked up while we're here.  He also started a mulch pile for a potential future garden.  Who knows what the future holds and we're just preparing is all. Speaking of preparing, I prepared some homemade pizza yesterday and let me tell you, brother Jim was super excited!  I know there are tons of recipes for pizza but I'll share mine with you just because.  When we were in Wisconsin and had electricity, I made pizza a lot because we consider it a regular meal with ingredients that we eat anyway.  Bread, tomatoes and cheese is basically what it is and I add mushrooms on top and it's relatively inexpensive to make. Off Grid Coffee

This post is for those of you who like coffee and might need a different way of making it instead of the conventional coffee maker.  I know, there's a lot of controversy about coffee and some people call it the Christian drug.  If that's so then I would like to add chocolate, pizza, and cookies as they can be overindulged and I've seen those such things alter people's moods.  Coffee has antioxidant properties as does tea and as in all things, moderation.  Paul says we are not to be mastered in anything (1 Corinthians 6:12)  Moving on from that.... I want to share a couple ways to make coffee without having a coffee maker and in a way that saves propane if you are off grid or traveling. You may have seen in a previous post how I shared these bags that we fill with coffee. Pickled Carrots

Greetings to my Titus2 keeper at home sisters! I tell ya, I'm in my element here on the homestead, being able to do some of these things I love to do.  Hand washing clothes, cooking on the woodstove, collecting kindling sticks for winter, pickling things...oh how my flesh longs for that garden and all the other homestead things but I'm thankful for the brief time here to do so before (Lord willing) we head out on the road again. I grabbed some cheap seeds from the store for 'just in case'.  I used to buy seeds online and from some of the catalogs, pouring over them for hours every January trying to figure out which ones I wanted. Here's the truth, the best green bean crop I ever got was from the cheap seeds, just like these 4/$1 and 2/$1.  The rest of my crops were just fine with regular, affordable seeds.  (You all make your own mind, I'm not here to make you feel bad if you choose to do otherwise.) Cooking White Rice in a Thermal Cooker

Looking for that blessed hope, and the glorious appearing of the great God and our Saviour Jesus Christ Titus 2:13 Not long ago I did a post about thermal cooking, you can read that HERE .  In that post I said I'd share about how to cook rice in it, after I figured out a good ratio, so here it is:-) At this point I've only done it in a big batch because I wanted left overs and boy did I have a lot left over!!! (We ate off it for several days:-) I used 2 1/2 cups of long grain white rice and 4 cups of water.  (I also added a tablespoon of dried onions and a drizzle of oil.)  I brought it to a boil, poured it into the thermal cooker, wrapped it up and walked away for 2 hours.  When I opened it, all the rice was fully cooked, not mushy and all I had to do was fluff it with a fork.  It was rather tightly packed but no big deal.  The cooking time is normally 1 1/2 - 2 t
